1 Lb. Rotini or Other Pasta
2 TBSP. Vegetable Oil
1 Medium Onion, Chopped
1 or 2 Garlic Cloves, Chopped
1 Green Pepper, Diced
2 Cups Mushrooms, Sliced
2 Cans Tuna, Drained
2/3 Cup Green Olives, Sliced
1 1/2 Cups Cream of Mushroom Soup
1/4 Cup Parmesan Cheese

Directions:

Preheat oven to 350.In a large saucepan of boiling water, cook pasta according to package directions or until tender but firm. In a large skillet, heat oil over medium heat. Add onions, garlic, green pepper and mushrooms; cook for 5 to 7 minutes or until vegetables begin to soften. Add tuna and sliced olives; cook for about 1 minute more. Transfer pasta to casserole. Add vegetable-tuna mixutre and toss together. Pour over top with Parmesan cheese. bake in preheated oven for 1 hour.
