1 can mandarin oranges
1/4 c. oil
3 tbsp. soft strawberry jam
3 tbsp. red wine vinegar
1 pkg. fresh spinach
1 red apple, chopped
1 c. chopped pecans, toasted

Directions:
Directions:
Drain oranges, saving 1/2 c. of the juice. Combine juice, oil, jam, and vinegar in a jar. Shake well. Toss oranges, spinach, apple, and pecans in a large salad bowl. Top with dressing just before serving.
