2 lb squash (4 medium sized)
1/2 cup chopped onion
3/4 cup saltine cracker crumbs
2 tbs butter
1 1/2 cups grated cheese
salt and pepper to taste
3 eggs, beaten
1/2 cup evaporated milk

Directions:
Directions:
Slice squash and cook with onion till tender-drain. Add cracker crumbs, butter and most of the cheese. Season with salt and pepper. Beat eggs slightly with milk, pour over squash and mix. Pour into a buttered dish and sprinkle with remaining cheese. Bake at 425 until brown on top.
