2 cups packaged chocolate wafer crumbs, 1/3 cup melted butter, 3 TBS sugar, 2 1/2 cups fresh raspberries, 2/3 cups sugar, 2 TBS cornstarch, 2 tsp lemon juice, 3 8 oz packages cream cheese, 1/2 cup sugar, 2 TBS flour, 1 tsp vanilla, 2 egg whites, 1 cup whipping cream, 3 1/2 cups fresh raspberries, 2 or 3 TBS orange juice

Crust: Combine cookie crumbs, 1/3 cup melted butter & 3 TBS sugar in mixing bowl. Press into bottom & 1 inch up sides of a greased 8" or 9" spring form pan.

Raspberry Sauce: Put 2 1/2 cups raspberries in a juicer to remove seeds. Put enough through to equal 1 cup of juice. (can add water if needed) Combine 2/3 cup sugar & 2 TBS cornstarch in small sauce pan. Stir in raspberry juice. Cook & stir over medium heat until hot & bubbly. Reduce heat, cook & stir 2 more minutes. Stir in lemon juice. Remove 3/4 cup sauce. Cool slightly with out stirring. Cover remaining sauce & chill until serving time.

Combine: cream cheese, 1/2 cup sugar, flour & vanilla in a large mixing bowl. Beat with electric mixer until fluffy. Add egg whites, beating on low speed just until combined. Stir in cream. Pour 1/2 mixture into crust lined pan. Carefully drizzle 3/4 cup raspberry sauce over cream cheese mixture ( do not bring sauce completely out to the edge of cake). Carefully top with remaining cream cheese mixture completely covering sauce.

Place spring form pan in shallow baking dish in 375 oven. Bake 35-40 minutes or until center appears nearly set when shaken. Cool on wore rack for 15 minutes. Loosen crust from pan sides. Cool 15 minutes & remove pan sides. Cool completely. Chill at least 4 hours.

To serve: top with remaining raspberries. Stir enough orange juice into remaining raspberry sauce to achieve a nice sauce like constancy. Drizzle over raspberries.

Another labor intensive recipe but it is REALLY good & very impressive to take to special occasions.

If you can not find the chocolate wafer crumbs, I have purchased the chocolate wafer pie shells & just broke them up to substitute.
