10 cups water, 1 chicken, 2 or 3 stalks celery

5 chicken bouillon cubes, 1/2 Tbsp basil, 1/2 Tbsp garlic powder, 1 Tbsp salt, 1 tsp pepper

1 lb endive, 2-3 carrots, 1 onion

small Italian pasta

Meatballs: 1lb ground meat, 1 egg beaten, 1 T minced onion, salt

Directions:
Directions:
Cook chicken & celery in water for 2 hours. Remove celery (dispose of) & chicken.

Allow chicken to cool & then debone & refrigerate. Let broth cool & refrigerate.

Next day remove fat & heat broth. Add chicken that has been cut into small pieces and the following: bouillon cubes, basil, garlic powder, salt & pepper. Simmer for 1 hour (add more water if needed) Add the following chopped veggies: endive, carrots & onion.

Add cooked meatballs. (see recipe below) Heat until boiling, add 1/2 lb small Italian pasta. Cook an additional 30 - 45 minutes.

Meatball recipe:
Mix ground meat, egg, minced onion & salt. Make bite size meatballs on the bacon tray & cook 4-5 minutes in the microwave oven. Turn after 2 minutes.

This recipe is a little labor intensive but is worth it. It makes a lot of soup. Good for family get togethers.
