1 C mashed bananas (about 3)
3/4 C sugar
1/4 C oil
1 egg
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp cinnamon
1/8 tsp salt
1.5 C flour

Crumb Topping:
3 Tbsp flour
3 Tbsp brown sugar
1 tsp cinnamon
1 Tbsp butter/margarine

Directions:
Directions:
Combine bananas, sugar, oil, and egg. Add dry ingredients. Put mixture into greased loaf pan. For topping, add flour, sugar, and cinnamon and then cut butter into dry mixture. Sprinkle on top. Bake at 350 for 50 min.

I've recently started making this bread with whole wheat and it is really good. I've even substituted half sour cream in place of oil, and it still turns out very moist. The crumb topping is what really makes this bread delicious.
