"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Heat the oven to 425. Line 2 baking sheets with tinfoil. In a large mixing bowl, dissolve the yeast in the warm water. Add the salt, honey, and 1 TBSP. of the sugar and stir well. With a mixer throughly blend in the flour on low, then medium speed. Turn dough out onto a lightly floured surface and knead it until it's smooth ( about 5 minutes). Divide dough into 16 roughly equal pieces, then roll each into a 10x12 inch long rope. On the foil lined baking sheet, shape each rope into a letter, number, or other design. Bake the dough shapes for 15 to 20 minutes, until lightly browned. In a small bowl, stir together the cinnamon and remaining 4 TBSP. of sugar. Now,leaving the pretzels on the foil, brush them with the melted butter and sprinkle the cinnamon suagr on top. Store any leftovers in an airtight container and reheat them before eating.
