2 c milk chocolate chips. Melt in a double boiler till creamy. Then remove from heat.
Add scant salt, 2 Tbl rum or vanilla,2 Tbl butter.
Now stir stir stir it'll be like a thick blob. Add 1/2 c cream. Stir till creamy again.
Now dissolve 1 Tbl unflavored gelatin in scalded 1/4 c cream. Stir till smooth! Cool to body temp.
Whip 2 c of whipping cream till stiff.

Now take the chocolate mixture and add the dissolved gelatin to it. Then take 1/4 of the whipped cream and fold that into the chocolate mixture. Now take the rest of the whipped cream and fold that into the chocolate mixture. The point is to keep the whipped cream nice and light. Put into small serving dishes and put into refer.for at least an hour.
