4 tbsp xv olive oil
6 tbsp butter
6 tbsp all purpose flour
4 garlic cloves (minced)
2 tbsp fresh thyme
2 tbsp fresh sage
* salt and pepper to taste
8 cups home made chicken stock heated (see index)
3/4 cup heavy cream
1 cup stock from mushroom stems
1 cup white wine (chardonnay)
3 large shallots (minced)
3/4 lb cremini mushrooms
3/4 lb shitaki mushrooms (stems removed)
3/4 lb button mushrooms

1. In 1-2 cups water simmer shitaki stems for 30 min. (strain and reserve)

2. Place xv oil and butter In 5 qt sauce pan, cook on med-high heat stirring for 10 min. (set aside)

3.In same pan add additional butter,shallots and garlic stir for 3 min.

4. Place mushrooms back and lightly salt and pepper

5. Add flour stirring for 3- min

6. Add wine set to high for 5-7 min

7. Add reserved mushroom stock keep stirring

8. Add one cup of stock at a time until you get consistency you like, stirring all the time.

9. Add heavy cream simmer for 5 min
