1-1/2 c. graham cracker crumbs
1/4 c. sugar
6 T. melted butter
5 (8 oz) pkgs. cream cheese (at room temperature)
3 T. flour
1-3/4 c. sugar
3 T. vanilla
3 T. lemon juice
5 eggs plus 2 egg yolks
1/4 c. whipping cream

Directions:

Combine crumbs, sugar and butter to press on bottom and part way up sides of 10" springform pan. Chill. Preheat oven to 500. Cream the cheese in mixer until soft and fluffy. Beat in flour and sugar, a little at a time. Beat in vanilla, lemon juice, the eggs one at a time and the cream, beating well between additions. Pour cheese mixture in prepared pan and bake at 500 for 12 minutes. Turn oven down to 200 and bake for 45 minutes. Turn off oven and leave cake in for another 15 minutes. Remove pan from oven and cool on rack 1 hour. Refrigerate cake in the pan for 5 hours before removing side of pan. Cake may collapse if time is cut short.
