Ingredients:  
Turkey gizzards, liver and heart
1/4 # butter
1 onion
small stalk celery
2 or 3 loaves old bread or 1 pkg stuffing
2 tsp poultry seasoning
salt & pepper

Directions:
Directions:
Put gizzards, etc in large pan of water
Cover and cook slowly for 2 hours

Melt butter and saute' finely cut up onion til light brown
Cut up stalk celery in large bowl
Add stuffing, poultry seasonings, salt & pepper
Stir in butter/onion mixture
Remove gizzards from pan (keeping broth aside), cut up and add to bowl
Mix all ingredients
Pour broth over mixture until all ingredients are moist
Refrigerate til ready to stuff turkey
After stuffing turkey, put remainder in casserole dish and heat in oven with turkey for about 1 hour
