1 Head Romaine Lettuce, Washed
8 Strips Bacon
2 TBSP. Butter
1/2 Cup Cream
2 Eggs
1/2 tsp. Salt
1 TBSP. Sugar
4 TBSp. Cider Vinegar
Pepper
Paprika

Directions:
Directions:
Tear lettuce into large pieces and place in a bowl.. Dice the bacon and fry slowly untl some of the fat renders. Raise the heat and cook bacon until crisp. Scatter over the lettuce. Melt the butter in the pan with any remaining bacon fat. Stir in the cream and bring to a boil, then simmer gently. Beat the eggs with the salt, sugar, vinegar,a nd pepper. Pour into the cream mixture and cook until the consisitency of thick custard, stirring constantly. Pour over the lettuce and bacon, and toss to coat. Sprinkle with paprika and serve immediately.
