3 Cups All-Purpose Flour
3 TBSP. Grated Parmesan Cheese
1 tsp. Salt
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
2 Eggs
1 Cup Buttermilk
1/3 Cup Sugar
1/3 Cup Butter, Melted
1 Cup Zucchini, Peeled & Shredded
1 TBSP. Onion, Grated

Preheat oven to 350. In a bowl, combine the flour, Parmesan cheese, salt, baking powder, and baking soda. in another bowl, beat the eggs, buttermilk, sugar, and butter. Stir into dry ingredients just until moistened. Fold in zucchini and onion. Pour into a greased and floured 9z5z3 inch loaf pan. Bake at 350 for 1 hour or until toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
