3 pds. Potatoes
1 Medium Onion
1 Large Egg, Lightly Beaten
2 TBSP. All-Purpose Flour
1 to 1 1/2 tsp. Salt
1/4 tsp. Black Pepper
Vegetable Oil for Frying

Directions:
Directions:
Peel and grte potaotes and onion into a large bowl. Stir in egg, flour, salt, and pepper. In a large heavy skillet, heat 1/4 inch oil. Drop potatoe mixture, a heaping TBSP. at a time, into oil and flatten with a spatula. Discard excess liquid. Fry latkes, several at a time, about 2 minutes on one side, turn and fry for 1 minutes on the other side, or until golden. With slotted spatula, remove latkes to paper towels to drain. Keep drained latkes warm in a 200 oven until all have been fried. Serve immediately.
