Herb Marinade:
Veggies:
1 cup olive oil
Thick red onion slices
2 tablespoons salt
Sliced eggplant
10 grinds black pepper
Sliced carrots or sweet potatoes
10 cloves garlic, minced
Sliced portobello mushrooms
3 sprigs fresh rosemary
Red, yellow, or green peppers
1 tablespoon red pepper flakes
Sliced zucchini or yellow summer squash

Directions:
Directions:
Combine the ingredients for the herb marinade. May be stored up to one week. Slice veggies about 1/4" thick. Brush veggies with marinade and let sit at least 15 minutes. Then grill them on the BBQ or under the broiler.
