2 lbs. extra lean ground turkey
1/2 white onion, finely chopped
1/2 orange bell pepper, finely chopped
1 lb. shredded cheese (jack, cheddar, mexican mix, pepper jack, etc.)
3 cans mild green enchilada sauce
24 corn tortillas
Seasonings: salt, garlic (or garlic powder), cumin, oregano
1 small bunch cilantro (optional)

Directions:
Directions:
Chop onions and pepper, saute in a little olive oil. Add ground turkey and seasonings, saute until turkey is brown/cooked. Finely chop the leaves of a small bunch of cilantro and stir into the turkey mixture.

Soften corn tortillas by sticking several in the microwave for 15-30 seconds; then, dip one tortilla (on both sides) in a shallow dish of enchilada sauce. Fill each tortilla with some meat and shredded cheese. Place in a greased glass baking dish (one recipe usually requires 2 pans.) Cover with remaining enchilada sauce & cheese. Bake at 350 for 30 minutes.
