4 large potatoes
3 Tbsp butter - softened
2/3 C sour cream
1/2 tsp minced garlic
3/4 tsp salt
1/4 tsp pepper
1/2 C shredded cheddar cheese

Directions:
Directions:
Scrub and pierce potatoes; cook in microwave uncoverd for 10-12 minutes or until tender. When cool enough to handle, cut potatoes in half lenghtwise. Scoop out pulp, leaving a thin shell. In a large bowl, mash the pulp with butter. Stir in sour cream and seasonings. Spoon into potato shells. Place back into microwave and sprinkle with cheese. Cook uncovered for 1-2 minutes or until heated through.
