Pumpkin Pancakes Recipe

2 cups whole wheat flour, finely ground
1/4 cup brown sugar, sparingly
2 tsp baking powder
1 tsp baking soda
1 tsp ground allspice
2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp salt
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tbsp canola oil
2 tbsp vinegar
maple syrup, for serving

In a large bowl, mix together milk, pumpkin, egg, oil and vinegar. In a seperate bowl combine the flour, brown sugar, baking power, baking soda, spices and salt. Stir into the pumpkin mixture just to combine. Scoop 1/4 cup of the mixture for each pancake onto a heated griddle, brown on both sides and serve hot with warm maple syrup.

I love the flavors of pumpkin and spices working together. Make this recipe during the fall or winter, when pumpkin is everywhere. It's a nice alternative to baking an entire pumpkin pie!
