1 3/4 cup raisin bran cereal
1 1/4 cup whole wheat flour, finely ground
1/2 cup turbinado sugar, or brown sugar
1 1/4 tsp baking soda
2 tsp ground cinnamon
1/4 tsp salt
1 egg, or 2 egg whites
3/4 cup buttermilk
1/4 cup canola oil
1 cup finely chopped peeled tart apple
3/4 cup grated carrots
1/4 cup chopped walnuts, if desired

Directions:
Directions:
In a bowl, combine the first six ingredients listed above. In a small bowl, beat the egg, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in apple, carrots and walnuts. Fill muffin cups coated with nonstick spray. Bake at 400F for 20 - 23 minutes or until a toothpick comes out clean. Serve warm.

These muffins taste almost like carrot cake. To get really indulgent, add cream cheese frosting to the baked and cooled muffins. They freeze well, too.
