1 lb bacon, diced and cooked to a crisp
4 C cubed potatoes
1 can chicken broth
1 1/2 C water
1 1/2 C frozen mixed veggies
1/4 C chopped onion
2 Tbsp parsley
1/2 tsp salt and peper
4 Tbsp flour
3 C milk
8 slices american cheese or cubed velvetta

Directions:
Directions:
In a large saucepan place chicken broth, water, parsley, onion, salt and pepper. Cover and simmer until potatoes are tender about 15 minutes. Combine flour and milk until smooth, and add to soup. Bring to a boil and stir for 2 minutes or until thick. Add mixed veggies and cheese; stir until cheese is melted. Stir in bacon and heat soup until hot.

Instead of regular bacon I use turkey bacon. This is a family favorite.
