5 eggs
1 1/4 C oil
1 15oz can solid packed pumpkin
2 C all purpose flour
2 C sugar
2 pkg 3oz each cook-serve vanilla pudding mix
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt

Directions:
Directions:
Preheat oven to 325. Beat eggs in large bowl with mixer. Add oil and pumpkin and beat until smooth. Combine all dry ingredients and gradually beat until mixed. Pour batter in greased loaf pans till 2/3 full. Bake for 50-55 minutes or until golden brown. Remove from oven and cool on wire racks.
