1 onion - chopped
6 Tbsp margarine
1/3 C all purpose flour
salt and pepper
4 C milk
3 C chicken broth
1 C shredded carrots
2 C broccoli - chopped
1/2 celery - chopped - optional
1 lb velvetta

Directions:
Directions:
Saute onions in margarine until tender over medium heat. Add flour, salt, and pepper and mix until smooth. Add milk slowly, until mixture is thick and bubbling. In small saucepan bring broth to boil. Add veggies. Cook about 5 to 10 minutes until tender. Combine with milk mixture and stir. Add cheese. Allow soup to heat until cheese is melted.
