3 eggs
2 C sugar
1 C oil or applesauce
1 Tbsp vanilla
2 C zucchini, shredded
1/4 tsp baking powder
3 C flour
1 Tbsp cinnamon
1 tsp baking soda
1 tsp salt
1 C chopped walnuts or pecans - optional

Directions:
Directions:
Beat eggs until foamy. Add sugar, oil, vanilla, and beat until thick. Add zucchini and sifted dry ingredients. Fold in nuts. Pour into greased and floured bread pans about 2/3 full. Bake at 350 for 1 hour or until golden. Take out of oven and place on cooling racks .
