Ingredients:  
3 beaten eggs 1 tsp. salt
1 1/4 c. oil 1 tsp.cinnamon
2 c. sifted flour 2 tsp. soda
2 c. sugar 2 tsp. vanilla
Mix eggs, oil, vanilla and sugar. Add dry ingredients.
Add:
2 c. grated raw carrots 1 c. chopped nuts
1 c. crushed pineapple 2 c. coconut
plus juice

Directions:
Directions:
Place in a greased 9 x 13 inch pan. Bake at 350 degrees for 50 to 60 minutes.

ICING:
3 oz. cream cheese 1/4 c. butter
2 c. powdered sugar 1 tsp. vanilla
Cream together and frost cake when cool. Sprinkle with nuts. Best the second day.
