3 large tomatoes, peeled, seeded, and sliced
1 tsp. salt, divided
2 refrigerated pie crusts (in canned biscuit section)
4 bacon slices
3 medium sweet onions, halved and thinly sliced
1 c. shredded cheddar cheese
1 c. mayonnaise
1/4 tsp. pepper

Directions:
Directions:
Place tomato slices on paper towels. Sprinkle with 1/2 tsp. salt and let stand 30 minutes. Place piecrust into pyrex pie plate, prick crust with fork, and bake at 425 for 10 to 12 minutes.

Cook bacon until crisp. Reserve 1 tsp. drippings in skillet. Saute onion in hot drippings for 8 to 10 minutes on medium heat until tender. Drain, and spoon into baked pie shell. Top with tomato slices.

Stir together cheese, mayo, pepper, and remaining 1/2 tsp. salt. Spread mixture over tomato slices and bake at 350 for 30 minutes until golden. Remove and sprinkle with crumbled bacon. Let stand 5 minutes before serving.
