6 larage Rome Beauty apples
finely grated zest of 1 orange
6 T. chopped raisins
1/4 c. packed brown sugar
1/4 c. unsalted butter at room temperature
1 t. ground cinnamon
1/4 c. honey
1/2 c. fresh orange juice or apple cider

Directions:
Directions:
Preheat oven to 350. Core the apples to within 1/2 inch of the base. Peel them only halfway down from the top. Place side by side in a baking dish. In a small bowl, stir together the zest, raisins, brown sugar, butter, and cinnamon till well mixed. Divide this mixture evenly among the apples, pushing it down into the apple cavities. In a small saucepan over medium-low heat, combine honey and orange juice or cider and heat till the honey dissolves. Pour the honey mixture evenly over the apples and bake, basting often with the pan juices, until the apples are tender when pierced with a fork, about 45 minutes. To serve. let cool to room temperature. Place on individual plates and spoon pan juices over the top.
