4 sundried tomatoes in oil, chopped
1/4 c red wine vinegar
3 garlic cloves, smashed
2 T basil, chopped
1/2 c olive oil
salt and pepper
Assorted vegetables (zucchini, squash, artichokes, peppers, mushrooms, etc.--whatever you like)
1/4 c olive oil
salt and pepper

Vinaigrette:
Place tomatoes, vinegar, garlic and basil in blender and blend until smooth. Slowly add the oil until emulsified. Season with salt and pepper to taste. Set aside.

Preheat grill. Brush veggies with oil and season with salt and pepper. Grill until cooked through. Arrange on a platter and drizzle with vinaigrette.
