6 cups chicken stock
1/2 tsp pepper
2 tsp fajita seasoning (or less)
3/4 c butter
3/4 c flour
1 pint half & half
1 c shredded monterey jack cheese
1 10 oz. can rotelle tomatoes with chiles
2 cups cooked, shredded chicken

Directions:
Directions:
Melt butter in saucepan. Add flour, pepper and fajita seasoning. Cook for 1 minute. Stir in half & half slowly and bring to a slow boil to thicken as if making a white sauce. Lower heat, add cheese and stir to melt. Warm chicken stock in a large pot. Add warm sauce. Add rotelle tomatoes and chicken. Mix and warm on stove. Do not overheat. Stir to thicken. Serve with tortilla chips in bowl.
