Cook 2 lbs. potatoes in microwave until fork tender. Cut in half, let cool, peel and dice.

Make marinade while potatoes are cooking. Mix with potatoes while still warm. Marinate in refrigerator until chilled.

2 Tbsp. salad oil, 2 Tbsp. cider vinegar
2 tsp. prepared mustard
1 Tbsp. tsp sugar, 3/4 tsp salt
1/8 tsp white pepper

Add to chilled marinated potatoes:
3 large hard cooked boiled eggs, chopped
1/4 C minced sweet onions
1/3 C pickle relish
1/2 C mayonnaise.
