3 to 4 lb. boneless prime rib
Cooking oil
Salt, Pepper, Garlic (use your favorite form)

Directions:
Directions:
Preheat oil in a skillet. Evenly brown the meat on all sides.
Rub the surface with salt, pepper, and garlic to taste.
Preheat the oven to 250 degrees F. This is real slow cooking.
Place the roast on a rack in a shallow pan.
Roast until the internal temperature reaches 140 degrees F.
It will take about 30 minutes per pound. If you are in a hurry, after one hour, turn the oven up to 300 degrees F. It will cut about 30 minutes off of the cooking time.
Serve with au jus and horseradish sauce.
