16 c. peeled tomatoes (Roma’s are the best)
3 onions
1 bunch of celery
3 large carrots
3 TBLS chopped garlic
1/3 c. Olive oil
4 (6oz) cans tomato paste
½-1c. sugar to your taste
¼ c. canning salt
1/8 c. Italian seasoning
1pkg. of Mrs. Wages spaghetti sauce seasoning.

Step #1. grind or chop in a food processor the onion, celery, carrot and garlic. Put this in a 16 quart stainless stock pot, add the olive oil, salt and Italian seasoning and sauté for about 5 minutes. Add the tomatoes, Mrs. Wages, sugar and tomato paste and simmer for 1 hour stirring often.

Step #2. Pour the sauce into hot clean quart jars and seal with hot lids. Process in a hot water bath for 10 minutes.

Note: I grind all the veggies with a meat grinder. The sauce gets a great consistency. You can serve this with any pasta and add any type of meat you prefer. This yields about 7-9 quarts.
