1 large salmon fillet (I get mine at Costco)
1/2 to 1 onion (depending on your like/dislike optional)
1/2 cube butter
1 large mango
Chopped cilantro
Salt and pepper

Directions:
Directions:
Heat up the grill to medium high (this can also be done in the oven). Lay down two strips of foil about 6 inches longer than the fillet and wide enough to close at top and fold over. Place onions on the bottom about the length of the fillet with butter cut in slices over onions add salt and pepper. Rinse and pat dry fillet. Put on top of onions. Add cut up mango and cilantro to the top. Add salt and pepper and more butter if you like. Fold foil over top and seal top and then just roll up the sides to make a sealed pouch. Put on grill 10-20 minutes. (Check at 10 min and the fish is finished when it is all pink.)
Serve with rice, asparagus, and salad any side you like.
