2 eggplants peeled, and sliced length ways
3 zucchini sliced length ways
1 cup crimini mushroom sliced
2 tomatoes, sliced
1 onion, sliced
2 eggs, beaten
cup flour
1 jar of vodka sauce (Look for it in the sauce section of your local grocery store, or use a homemade tomato sauce)

Directions:
Directions:
Dip eggplant slices in egg then cover with the flour, and brown in a frying pan.

In a 9"x13" pan, layer the eggplant, onions, mushrooms, zucchini, and tomatoes. And then layer again (like lasagna). Pour sauce over it all, top with feta and bake at 350 degrees for 30 minutes.
