1 bay leaf
1 carrot chopped
1 celery stalk
7 lb. of fish parts. heads, tails, filleted bodies
2 gallons of water
salt and pepper to taste

Directions:
Directions:
1.Bring 2 gallons of water to a boil using large stock pot.
2. Add the fish parts,bay leaf,carrot and celery
3. Return stock pot to a boil and reduce heat to a simmer on low heat for 45min to an hour.
4.Strain using a pasta colanders and some cheese cloth into a large bowl.
5. Lightly salt and pepper for taste
