Ingredients:  
1 onion chopped
2 bay leaves
2 carrots chopped
2 celery stalks chopped
2 tbsp whole peppercorns
7 lb beef bones (preferably shanks)
2 gallons of water
salt to taste

Directions:
Directions:
1. Bake beef bones (shanks) in oven until golden brown, 350 for about one hour. use a sheet pan.
2. Remove beef bones and place them into a lrge stock pot.
3. Add the water,onion,carrots,bay leaves,peppercorns,celery stalks
4. Bring to a boil and reduce to a simmer on low heat for about 2 hours.
5. Strain using a pasta colander and some cheese cloth into a large bowel.
6. Lightly salt to taste
