1 onion
2 bay leave
2 celery stalks chopped
2 tabs. peppercorns
2 turkey carcasses (cut up) about 3 -4 lb
2 gallons of water
salt to taste

Directions:
Directions:
1. Bake Turkey Caracas until golden brown in pre heated oven 350F for one hour. Use a sheet pan.
2 . remove and place all the tukey parts including any drippings into large stock pot.
3. Add the water, onion,bayleaves, celery,and peppercorns.
4. Bring to boil and reduce to simmer on low heat. for about 3-4 hours.
5. Stain with a colander and some cheese cloth into a large bowl.
6. Lightly salt to taste. (do not over salt) it can always be added later.
