6 large firm green peppers (or pickeled ones too)
6 slices approx (2-3) day old Italian bread
(may add bread crumbs-later if you need to tighten consistency)
1 clove garlic minced
1/4 c. grated cheese
anchovy fillets cut up (optional)
2 tbsp.chopped basil or parsley
1 egg
1/2 c. raisins (optional)
about 3 tbsp. oil

Directions:
Directions:
Wash & dry peppers. Remove stems and hollow out for stuffing. Moisten bread throughly and squeeze dry. Put into bowl with remaining ingredients. Mix. Stuff peppers lightly. Cook peppers in about 3-4 tbsp. hot oil in heavy skillet. Turn frequently to brown evenly.
