2 C. Whole wheat pastry flour
1 egg
11 tbsp. butter, chilled
2 tbsp. sugar
1 tsp. cinnamon
1/2 tsp. salt
ice cold water (added as needed)

Directions:
Directions:
Sift flour, sugar, salt, and cinnamon together. Add butter and cut into dry mixture using a pastry knife. Add beaten egg and 2 tbsp. cold water to the mixture. Mix with fork and assess for proper consistency. Add additional cold water if needed. Roll 1/2 mixture onto floured surface (NOT between 2 sheets of plastic wrap as this is bad form) until 1/8 inch thick. Slump into pie pan. Repeat with top crust. Bake at 425 for 15 minutes, then reduce heat to what the specific recipe calls for.
