2 lbs sweet potatoes, diced into 1 inch cubes
4 cloves crushed garlic (more or less as desired)
2 tbsp. fresh or dried rosemary, chopped finely
2-3 tbsp. balsamic vinegar
1 tbsp. olive oil
2 tbsp. dried parsley, basil, thyme (an assortment)
1 tsp. powered ginger
salt and pepper, as desired

Preheat the grill or oven broiler. While the grill is heating, mix together the potatoes, garlic, rosemary, dried herbs, and ginger power. In a smaller bowl, whisk the olive oil into the balsamic vinegar, and add salt and pepper to taste. Pour the liquid over the potatoes, and mix thoroughly. Coat tinfoil with nonstick spray or olive oil, and then spread the potatoes onto the foil. Add more herbs, garlic, or balsamic as you see fit. Finally, place the potatoes on the grill or broiler. Stir occasionally to prevent burning. Cook to desired tenderness. For best results, take the potatoes off when they are still slightly firm to the bite.
