2 1/2 c. canned sweet potatoes, mashed plus 2/3 c. liquid from potatoes
3 eggs, slightly beaten
3/4 c. sugar
1/2 c. milk
1 tsp. vanilla
3 tbsp. margarine, melted
1 tsp. ground nutmeg
Pinch of salt
1 unbaked 9-inch pastry shell

Directions:
Directions:
Combine ingredients and beat at medium speed until well blended. Spoon into pastry shell. Bake at 425 for 35 minutes or until knife inserted halfway between center and edge of pie comes out clean. Cool before serving.
