1# carrots, cleaned and sliced, 1 oz butter, 1/2 cup orange juice, 4-5 cups of chicken stock or vegetable stock(for vegetarians), 1 small onion, roughly chopped, 3-4 tsp chopped fresh thyme, salt/pepper to taste, sour cream and nutmeg for serving (or cilantro).
This can be served either hot or cold !

Place carrots and butter in large pan and cook for 10 minutes over medium heat, add orange juice, stock and onion. Bring to a boil, add thyme, salt and pepper. Reduce heat, cover and cook for 20 minutes till carrots are tender. Allow to cool.
Process in blender or food processor in batches until smooth. If serving hot, return to pan and heat. Top with sour cream...nutmeg...cilantro and serve.
