1 hen
2 c. plain flour
1/2 stick butter
4 eggs, boiled and chopped
1/2 c. whole milk
salt and pepper

Directions:
Directions:
Mix 1 1/2 c. flour with chilled water to make a thick, gummy dough mixture. Refrigerate at least 3 hours or overnight.
Bake or boil hen. Drain off stock and save. Discard bones, and place chicken and stock in large pot with enough water to make 3 qts. Add butter, salt, and pepper. On a well floured sheet, roll out small amounts of dough mixture as thinly as possible. Cut into strips, making sufficient amount of dumplings. Drop strips into boiling stock mixture one at a time and rapidly to avoid stirring as much as possible. Reduce heat to low, add eggs and milk.
Cover for 10 minutes. Serve hot with cornbread!!
