4 eggs
1 c. vegetable oil
3 c. sugar
1 c. water
1 1/3 c. pumpkin
3 c. all-purpose flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tbsp. cinnamon
1 tbsp. ground allspice
1 tbsp. nutmeg
1 tsp. ginger
1 c. walnuts or pecans or a mixture of both, chopped

Mix eggs, sugar, oil and water. Add remaining ingredients. Bake at 350. You can use two loaf pans sprayed with Pam or I use mini muffin pans sprayed with Pam. Bake 1 hour if using loaf pans and about 10-15 min. if using mini muffin pans. Do not overcook.
