1 package frozen peas and carrots
1 can mushroom soup
1 1/3 cups water
1/2 cup milk
dash of salt
1 1/3 cups Minute Rice (or 2 1/2 cups leftover cooked rice)
1/2 cup grated cheese.

Directions:
Directions:
In a sauce pan, combine everything but the rice and cheese. Bring to a boil and simmer for 2 - 3 minutes. Pour half of the mixture into a casserole then add the rice. Top with the rest of the mixture. Sprinkle with cheese and bake at 350F for 20 minutes.
