1 c. shortening
1 c. firmly packed brown sugar
1/2 c. sugar
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 c. oatmeal, uncooked
1 c. chocolate chips

Directions:
Directions:
Heat oven to 350 degrees. Beat together shortening and sugars until creamy. Add vanilla and eggs. Beat well. Add flour, baking soda, cinnamon and salt; mix well. Stir in oatmeal and chocolate chips. Mix well. Drop by tablespoon onto ungreased cookie sheet. Bake 10 - 12 minutes or until golden brown. Cool 1 minute on cookie sheet.

You can substitute 1 c. raisins for the chocolate chips. You can also make bar cookies by baking for 30 - 35 minutes in an ungreased 13 x 9 pan.
