Casserole bottom:
3 c. mashed sweet potatoes
1 c. sugar
1/2 tsp. salt
2 beaten eggs
1/2 stick butter
1/2 tsp. vanilla

Topping:
1 c. brown sugar
1/2 c. flour
1 c. pecans; chopped
1/2 stick butter; cut into small pieces

Directions:
Directions:
Place the casserole ingredients in a mixing bowl and mix well. If it is not juicy enough, add a little bit of sweet milk. Pour in the bottom of an 8 x 8 baking dish.

Mix together topping ingredients and sprinkle over potatoes. Bake in a preheated 350 oven for 45 minutes or until heated through.

2-16 oz. cans make a little over 3 c. sweet potatoes but this is best with fresh sweet potatoes. Just peel, boil and mash.
