1 package (1/4 oz.) active dry yeast
2 c. warm water (110 to 115 degrees), divided
1/3 c. sugar
2 tbsp. vegetable oil
1 tbsp. salt
1/2 c. rye or whole wheat flour
5-1/2 to 6 c. all-purpose flour

Directions:
In a large mixing bowl, dissolve yeast in 1/2 cup of water. Add sugar, oil, salt, rye or wheat flour, 3 cups all-purpose flour and remaining water; beat until smooth. Add enough remaining flour until you have a soft dough. Place dough on a well floured surface; knead until smooth (about 6 minutes). Put dough in a greased bowl and flip once to grease both sides. Cover with a towel and place in a warm place; let rise until about doubled in size (about 1 hour). Punch down dough and divide in half. Flatten each half to 1-in. thickness on a greased cookie sheet. Pierce a few times with a fork. Cover with towel and place in a warm place. Let rise until doubled again (about 30 minutes). Preheat oven to 375. Bake for 25 to 30 minutes or until golden brown. Let rest on pan for 10 minutes and transfer to a cooling rack.
