2 cups sugar,
2 cups flour,
2 tsp soda,
2 tsp cinnamon,
4 eggs,
dash of salt,
1 1/2 cups salad oil,
3 cups grated raw carrots,
2 tsp vanilla

Directions:
Directions:
Sift dry ingredients. Add salad oil and beat slowly for 5 minutes. Add eggs one at a time. Stir in vanella and fold in carrots. Bake 45 min or longer in 9x13 pan.

Frosting:
4 oz cream cheese, 1 stick margarine, 1 lb powdered sugar, 1 cup chopped nuts.

I grate the carrrots in a blender - small amount at a time. It takes quite a while.
I I think 1 lb of powdered sugar is too much and 1/2 to 2/3 cup nuts is enough for the frosting.
