1 medium head cauliflower
3 tbs. hot water (heated in microwave)
1/2 C mayonnaise (low-fat OK)
1/2 tsp. salt (or less)
1 tsp. prepared mustard
1/2 C shredded sharp cheddar cheese

Directions:
Directions:
Remove leaves and trim bottom of cauliflower into concave shape.
Rinse & place in 1 1/2 quart casserole with 3 tbs. hot water.
Cover, cook in microwave 8 to 10 min. on high until fork tender. Drain.
Combine remaining ingredients and spread over top of cauliflower.
Cook 1 1/2 min. on high or 2 min. on medium in microwave, uncovered until sauce bubbles and melts.
Cut into slices and serve.
