1 head cauliflower (2 pounds) cut into florets
1/2 tsp salt
1/2 tsp ground nutmeg
Pinch cayenne pepper
2 Tbsp butter
2 Tbsp grated Parmesan cheese
2 Tbsp milk
2 Tbsp chopped parsley

Directions:
Directions:
Cauliflower Puree: bring large pot of salted water to a boil, add cauliflower cook for 15 minutes or until very tender, drain, pressings lightly to release liquid. Add cauliflower into a bowl of a food processor and puree, add all ingredients slowly, except parsley, add mil as needed for a creamy texture, spoon into a bowl, stir into parsley, keep warm. serve immediately.
